Cotton Cheese Cake

Came back from Sabah trip on Saturday night and I'm pretty tired. I intended to bake something when I reach home about 10pm but then after unpacking my things, I drop on my bed and slept till morning. *lazy me*

So I woke up early morning on Sunday and decided to bake a simple japanese cotton cheese cake. I had blog about this cake before and even provided the recipe. Check it out here.

Anyway, my skills in baking this cake has dropped tremendously. I remembered the last round when I baked this cake, it was much fluffier. I think I did not whisk enough egg whites. But somehow Doink loves this cake a lot. It's best served cold.

Still trying to sharpen my skills in baking this simple, low calories (compared to any other cheesecake), yummy cake. hehe... It's great dessert to savour for people who are worried about thier waistline (just like me). *grin*

Brekkie Cookies

I was so excited and happy in the morning. Woke up about 8am on Saturday and started taking out all my utensils, ingredients to bake some cookies for Doink. Hehe...

I made the usual chocolate chip raisins cookies.
But But.... unfortunately my 2nd tray of cookies were burnt. *watery eyes* Was kinda depress and I was so frus at myself for being so careless. But thank god I still have another tray of cookies for Doink. Wanted to bake more so that I can share it with my colleagues but unfortunately I don't have enough now.

Anyway, that weekend I decided to make some brekkie cookies. Why do I call these brekkie cookies? That's because they contain breakfast ingredients - quaker oats, raisins, and milk. I decided to make it a little sinful by adding some chocolate chips in it.

I wasn't sure about the measurement. I just baked the cookies according to my instinct and add whatever ingredients which I felt should be savour when you are having a healthy brekkie. There are certain things that you can add in which are almonds. I'm not a nut fans and that's why I did not put any almonds in it but I'm sure it will add more taste and flavour to it.

These cookies are lovely to savour. I was trying to make it less sinful by adding in less butter. However, sinful food always taste better. Doink find the taste is nice and it's yummy to have something different at times. He feels it's kinda healthy cookie. And he still prefers the sinful chocolate chip cookies that I always make for him.

Delicious Cookies perfect for brekfast or just before bed time. Serve it with a cup of warm milk. Yummy!!! Gonna have one now...

Anyway, I will be away to Sabah tomorrow. *sob sob* Most people will be happy being able to travel but I'm sobbing is because I don't get to see Doink and moreover I will miss my kitchen loads.... Seriously I have no time to be in the kitchen ever since I started my new job.

I'm gonna push myself harder to cook more often. Anyway, really tired now. Have to be at the bus stop to catch the bus to the airport tomorrow in the next 5 hours. That means I will have less than 3 hours of sleep. Darn!!! Gonna be a panda. Muaks & Hugz to all my readers. *nitez*

Goey Chocolate Pudding

Weekend was tremendously short and I barely had enough rest. Not sure what I was doing anyway. I didn't even have time to cook. Anyway, this is what I made last weekend - Goey Chocolate Pudding.

A very simple, sinful dessert and it taste really good too. This pudding can be made flourless but then I decided to add some flour in it to give a bit of cakey texture. However, I wasn't sure what was wrong with me at that time or what I was thinking that I added too much flour in it. *shaking head*

I ended up making the cake less goey - meaning less chocolate sauce when I cut open the pudding.

However, the pudding still taste really yummy. Doink and I enjoyed it loads. I sprinkled some icing sugar over it and served the pudding with peaches and ice cream. Oooh, sinfully delicious. Haha... I'm definitely gonna make this pudding again and I will make sure that next time I won't put too much flour in it.



Sinfully Good!!!

This is definitely worth making for someone who wants a simple and delicious dessert to savour. Doesn't require much effort and the ingredients used are not expensive at all. Just chocolate (depending on what type of chocolate u enjoy - I recommend dark chocolates), butter, eggs, sugar and a bit of flour. That's it. Happy trying making this dessert.
There are many different version of making this dessert and I'm gonna experiment making all of it. Haha... Will update you guys more on it when I make it.

Baked Alaskas

Baked Alaskas is an impressive, easy pudding that can be prepared well ahead, ready to pop into the oven minutes before serving. Yummy!!! It's one of the few things that I always wanted to try when I'm dining at restaurants but never got the chance.

So in the end I decided to treat myself well and make one of these little creature to try it with Doink. hehe.... In fact this is the dessert which I had with Doink after our Saturday night dinner.

It' pretty simple to prepare it. Firstly I crush the digestive biscuits and stir in the melted butter and press the mixture into rounds on a baking sheet and freeze it.

Than I beat the ice cream to soften slightly and pile on top of the biscuit base. Return to the freezer for at least 1 hour.

Than I whip egg whites andsugar and fold in the dessicated coconut. I cover the ice cream mounds completely with a thick layer of meringue. And I just leave them in the freezer.

To serve, I just preheat the oven andbake it for about 5 minutes. Mmmmm.... yummy. I use the vanila and chocolate ice cream. I think it will taste better if it's just chocolate ice cream. hehe...

Oh, I almost forgot, dust it with cocoa powder before serving. I forgot to do that apparently. But never mind, it still taste good. *grin*

I just love this dessert. It just taste absolutely gorgeous. hehe...Gonna prepare more and stuff them all in my freezer so that I can have them whenever I feel like it. hehe....
Anyway, I managed to sprinkle cocoa powder for my 2nd Baked Alaskas. The cocoa powder gives it more taste but doesn't contribute much to be honest. So with or without is the same. hehe...

I recommend anyone to make this yummy dessert. Just make them in advance and pop them in the freezer and you can have it anytime you want.

Packed Breakfast and Lunch

I have been pretty busy lately with work and thus I do not have much time to update my blog. Well, I will try my best to update as often as possible k. *smile*

Anyway, I would sometimes wake up probably half and hour early in the morning to prepare breakfast and lunch for Doink to bring to work in the morning. As he gets pretty bored with the food at his office, I will try and prepare lunch for him once in a while so that he will have something more interesting to eat. So what did I prepare for him???

I love making sandwiches. When I was in UK, I used to work in a sandwich shop and I will prepare 100 + sandwiches everyday for customers. I have to be fast to serve all the customers. So I'm kinda expert in it now already. hehe....

Anyway, for breakfast, I prepared tuna sandwich for Doink. I mixed the tuna with mayonaise, red onions, pepper and salt. And then spread it on a toasted bread and place some cucumber slices and it's ready to eat. It's also good if you add a slice of cheese in your tuna sandwich. Ooooh... yummy!!! And for his lunch, I fried some rice with luncheon meat, beans, carrots and onions. Just a normal simple chinese fried rice topped with eggs.

A very nice and simple meal for lunch. I added some chilies and spring onion together with the fried rice to give a kick to the taste. It's so darn good. Doink loves his lunch a lot of course.

I don't think I have the energy to prepare breakfast and lunch every morning for him. It's pretty tiring especially nowadays when I hardly get enough sleep. Well, I don't mind making the breakfast but if I have to prepare lunch as well, I will probably need to wake up another half hour earlier. hehe... Anyway, it's kinda fun to do this once in a while.

Saturday Night Dinner

It's been a while since I last cook a meal for Doink. And nowadays I only have time to bake sinful fattening dessert for him instead of dishing up a nice healthy meal for him.

So that's why this weekend I decided to cook some healthier meal for Doink and I sacrifice myself from dining out on a Saturday night. *ahem* It was a last minute decision to cook dinner so I went searching the fridge and freezer and see what's in there.

Hmm, I found dory fish in the freezer. hehe... So I made a simple grilled herb dory fish served with mashed potatoes (no fries as we have been having Mcdonalds fries *grin*) and boiled vegetable. It's a really simple dish and it taste really yummy and healthy too. Serve the fish with lime and tartar sauce (if you prefer). Hopefully Doink don't end up becoming forgetful after eating this Dory fish. *laughing out loud*

The next thing I found in my freezer is chicken. I saw my orange concentrate syrup on the table and honey in the cupboard. I came up with Orange and garlic chicken with sausage skewers. I added sausages in it is because I did not have enough chicken meat. *laugh*

To be honest, I had never tried cooking this dish. I just decided to experiment it. I just marinade the chicken and sausages with orange syrup and honey. Than I skewer the onions, tomatoes, chicken and sausages and just grill them. Tadah..... my simple and yet another healthy dish. It taste kinda unique and nice. Very refreshing. hehe... Worth trying. I wanted to skewer it together with bell peppers to make it more colourful but unfortunately I couldn't find any in the fridge. *shaking head*

There goes my Saturday night. Well, it's kinda nice to just to sit at home and chill out. I'm sure many of you guys out there are partying on a Saturday night. hehe... I feel so old now... And here comes the Monday again. Geez, it's gonna be a long week again. Happy Monday to everybody!

Oh ya, I also made some dessert. hehe... Will share it on my next post. *grin* I give you some clue. It's something sweet. (DUH!!!) hehe...

Chocolate Fudgey Shortbread

My weekend did not just end it with Mango Pudding. I also made some sinfully delicious Chocolate Fudgey Shortbread. This is a pretty sinful desserts. But nevertheless it's good. Anyway, all good food are sinful. hehe....

The first time I ever tried this dessert is when I was in UK working in Halls of Residence. I never knew what this was and never got to try it ever since I came back from UK. I love it so much.

I almost totally forgotten about this dessert until recently when I was flipping my recipe book and came across this particular recipe. I was so happy and decided to give it a try making them.



Chocolate Fudgey Shortbread

To be honest, it is pretty simple to make and this can be done like in 30 minutes (excluding washing utensils). Firstly I have to prepare the bottom shortbread layer. It's just flour, sugar and butter. And bake it for about 20 minutes. Just that simple....

Than you prepare the middle layer which is the fudgey layer. Just add condensed milk, sugar and butter and cook over a pan till it thickens. Than spread it over the shortbread. Ooooh, I can just eat this fudgey thingy..... So yummylicious!!!

And finally, once the fudge thingy is harden, it's time to spread melted chocolate over it. Oooh lala..... How could one resist such sinful food. Put this in the fridge and it is ready to be served. Well, as I'm a very impatient person, I actually took a few slices before chucking them into the fridge. hehe... But I have to admit that it taste way way much better when it's cold.

I also spread white chocolate over those fudgey slices. But I don't know why the colour came out exactly the same as the fudge. Anyway, Doink loves this one better as he finds it sweeter. Oh well, he always loves the unhealthy version of food.

Mango Pudding

Well, here comes the end of the weekend again. *sob sob* Again I'm getting the Sunday Blues. It's even worst especially when Doink is busy and he can't be with me. Sigh!

But anyway, my weekend was wonderful. Spent loads of quality time with him. hehe... Didn't cook any meals for him but just made some refreshing Mango pudding for him to savour. He has been asking me to make some puddings but I tend to forget about it. Hehe... I remember that I used to make a lot of Jellies for him and he will finish my jellies really quick. *laughs*

These are easy to make mango pudding. Half mango flavour, half santan flavour. Decorate it with cherries and rambutan stuffed with pineapple. Oh ya, Doink wanted to eat those rambutans pineapples, so I bought a can and decided to use it as decorations.

These puddings are so simple to make. It's so refreshingly good and it will be gone in no time especially on a hot day.

Mini Chocolatey Cupcakes

Started my new job already and so far everything is very new to me. So there are plenty of things to learn from scratch. *stress* But I'm enjoying it to be honest. It's just that I will now have less time to cook and bake. I now no longer able to bake yummy cakes or cook delicious meal after work. *sob sob*... Hopefully I still have the mood to do so during the weekends. Sorry Doink, I will now have less food to feed you...

Anyway, before starting my new job, I managed to bake some yummy mini cupcakes during the weekend for Doink. *smile* These lovely mini cupcakes contains raisins and of course not forgetting my chocolate chips.

Of course I didn't just bake them and leave it like this. I topped it with sinful melted chocolate.... Yummylicious!!!! *drooling*

It's not done yet. Sprinkle it with coloured sugar and decorate it with cherries and sugar hearts. Oooh, aren't there pretty!!!

Now there are now ready to be executed. It's so tiny that you will not feel sick even after you have 3-4 pieces of it. Hehe!!! Doink really enjoys it for sure.

And mini cupcakes are not the only thing I made. Continue baking my lovely blueberry with cream cheese muffins. haha... Sinfully gorgeous. It's of course best savoured when it's warm while the cream cheese are still soft.



Now I'm planning what to cook or bake this weekend!!! Hmmm, feel like making pizza again as Doink wants it. He really enjoys it. Maybe I should ask him again to place his order. I'm running out of food to cook for him. Looking for some good recipes but does not cost me a bomb to prepare for him. hehe.... Anyway, hope everyone will have an amazing weekend!!!

Chicken Pie or Bread Bowl Soup...hehe...

Just got back from a holiday stay at Hotel Istana, Kuala Lumpur. Well, it was an enjoyable holiday and I had to say that it was the best holiday I ever had. Gonna let you on my next post. But for now, I'm gonna talk about my next cooking experiment.

This is my first experiment on making chicken pie. hehe... Well, with some time to spare lately, I decided to try out making this dish. In fact I cheated. I used a 'short cut' to cook this dish by using a special ingredients - Campbells Mushroom Soup.

I just cook the chicken, onions, mixed vegetable and mushrooms and then pour in the can of Campbells Mushroom Soup and add half a can of milk to give it more flavour. Cook till the sauce thickens. Simple isn't it. =)

But then i was so clumsy that I had forgotten to buy the ready made pastry. So I had no choice but to make a quick pastry recipes. Of course the end results wasn't that fantastic. I'm not an expert in making pastry at all.

Than I baked those pies in the oven for about 20 minutes and it's ready to be served. Yummy!!!

Doink did let me know that this pie dish could also be called a Bread Bowl Soup. hehe... Well, I'm gonna practice more so that I will be making a real chicken pie instead of this 'pirated' one. hehe...
